Description

A delightful twist on the classic Italian favorite, combining creamy richness and smoky salmon flavors for a satisfying meal.


Ingredients

  • 8 oz spaghetti or fettuccine
  • 4 oz smoked salmon, cut into pieces
  • 2 large eggs
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and black pepper, to taste
  • 2 tbsp olive oil
  • Chopped fresh parsley for garnish


Instructions

  1. Cook the spaghetti or fettuccine according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. While the pasta cooks, whisk together the eggs, heavy cream, and Parmesan cheese in a bowl. Set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  4. Lower the heat and add the smoked salmon to the skillet, stirring to combine with the garlic.
  5. Toss the drained pasta into the skillet, ensuring it’s well-coated.
  6. Remove the skillet from the heat, and quickly mix in the egg and cream combination. If the sauce feels too thick, add some of the reserved pasta water to achieve a creamy consistency.
  7. Season generously with salt and black pepper. Garnish with freshly chopped parsley before serving.

Notes

Use fresh, high-quality smoked salmon for the best flavor. Avoid scrambling the eggs; mix off heat for a smooth sauce.
