Description

A quick and comforting weeknight meal that combines spicy Cajun flavors with a creamy honey sauce over fettuccine.


Ingredients

  • 8 oz fettuccine (or your favorite pasta)
  • 1 tbsp olive oil
  • 1 lb boneless skinless chicken breast, diced
  • 2 tbsp Cajun seasoning
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup (4 tbsp) unsalted butter
  • 2 cloves garlic, minced
  • 2 tbsp honey
  • 1/2 cup heavy cream
  • Fresh parsley, chopped (optional, for garnish)


Instructions

  1. Bring a large pot of salted water to a rolling boil. Add fettuccine and cook according to package directions until al dente. Drain, reserving 1/2 cup of the pasta cooking water, then set the pasta aside.
  2. Pat the diced chicken dry with paper towels. Toss with Cajun seasoning, and season lightly with salt and pepper.
  3. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the chicken in a single layer — don’t overcrowd. Sear, stirring occasionally, about 6–8 minutes, until golden and cooked through. Remove chicken to a plate.
  4. Reduce heat to medium. Add 1/4 cup butter to the same skillet and allow it to melt. Add minced garlic and sauté 20–30 seconds until fragrant.
  5. Stir in 2 tbsp honey and let it simmer for about 1 minute.
  6. Pour in 1/2 cup heavy cream and stir until the sauce is smooth and slightly thickened, about 1–2 minutes. Taste and adjust seasoning.
  7. Return the cooked chicken to the skillet and toss to coat in the sauce.
  8. Add the drained pasta to the pan and toss until every strand is coated. Adjust thickness with reserved pasta water if needed.
  9. Garnish with chopped parsley and serve immediately.

Notes

For a lighter meal, serve over zucchini noodles or with a larger salad. Store leftovers in an airtight container for up to 3–4 days.
