Description

Light, green, and surprisingly satisfying bagels made with cottage cheese and fresh spinach. Perfect for quick weeknight dinners or brunches.


Ingredients

  • 1 cup cottage cheese (full-fat recommended)
  • 1 cup fresh spinach, chopped and packed
  • 1 large egg
  • 1 cup all-purpose flour or whole wheat flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ teaspoon garlic powder (optional)
  • 1 tablespoon olive oil (for brushing)
  • Sesame seeds or everything bagel seasoning (optional topping)


Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the cottage cheese, chopped spinach, and egg; stir until evenly mixed.
  3. In another bowl, whisk together the flour, baking powder, salt, and garlic powder (if using).
  4. Gradually add the dry mixture to the wet ingredients, stirring until a sticky dough forms. If too wet, add flour by the tablespoon.
  5. Divide the dough into four equal portions and shape each into a round disc about ¾–1 inch thick, poking a hole in the center.
  6. Place the bagels on the prepared baking sheet, brush with olive oil, and sprinkle with optional toppings.
  7. Bake for 20–25 minutes until golden brown, using a skewer to check for doneness.
  8. Cool for a few minutes on the baking sheet before transferring to a cooling rack.

Notes

For a crisper exterior, consider broiling for 1–2 minutes at the end. Store cooled bagels in an airtight container or freeze for later.
