Light and fluffy tender crepes perfect for sweet or savory fillings.
Ingredients
- 1 cup all-purpose flour
- 2 large eggs
- 2 cups milk
- 2 tablespoons melted butter
- 1 tablespoon sugar (optional)
- 1/4 teaspoon salt
- Butter or oil for cooking
Instructions
- In a mixing bowl, whisk together flour, eggs, milk, melted butter, sugar, and salt until smooth. Allow the batter to rest for 10–30 minutes.
- Heat a non-stick skillet over medium heat and lightly grease it with butter or oil.
- Pour about 1/4 cup of the batter into the skillet and swirl it around to coat the bottom evenly.
- Cook for 1–2 minutes until the edges lift, and the bottom is a lovely golden color.
- Flip the crepe and cook for another minute.
- Remove the crepe and stack it on a plate. Serve immediately with your favorite toppings.
Notes
For a gluten-free version, swap all-purpose flour with a gluten-free flour blend. For savory crepes, omit the sugar.
