Description
Indulgent weeknight chicken dish with a creamy pan sauce and melted Jack cheese.
Ingredients
- 3–4 boneless, skinless chicken breasts (about 1.25–1.5 lb total)
- 2 tablespoons olive oil
- Salt and freshly ground black pepper, to taste
- 2–3 cloves garlic, minced
- 1 cup low-sodium chicken broth
- ½ cup sour cream
- 1 cup shredded Jack cheese
- Chopped green onions for garnish
- Paprika for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Pat chicken dry with paper towels. Rub each breast with olive oil and season both sides generously with salt and pepper.
- Heat a large oven-safe skillet over medium-high heat. Add the chicken and sear until golden brown, about 4–6 minutes per side. Remove the chicken from the skillet and set aside.
- Reduce heat to medium, add minced garlic, and sauté for 20–30 seconds until fragrant.
- Pour in the chicken broth and scrape up the browned bits from the bottom of the pan. Let reduce for 1–2 minutes.
- Stir in sour cream until the sauce is smooth. Let it bubble gently for 3–5 minutes, taste and adjust seasoning.
- Return the seared chicken to the skillet, spoon sauce over, and sprinkle cheese on top.
- Transfer the skillet to the oven and bake for 10–15 minutes until the cheese is melted and bubbly and the chicken reaches an internal temperature of 165°F (74°C).
- Let sit for 2 minutes, then garnish with chopped green onions and paprika before serving.
Notes
Use low-fat sour cream or Greek yogurt for a lighter option. For smoky flavor, try smoked paprika.
