A quick and easy one-pan meal that captures the cozy flavors of stuffed peppers without the hassle.
Ingredients
- 1 lb ground beef (80/20 or 90/10)
- 2 tablespoons olive oil
- 2 large bell peppers, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 (8 oz) can tomato sauce
- 2 cups cooked rice
- 1 cup shredded mozzarella cheese
- 1/4 cup chopped fresh parsley (optional)
Instructions
- Heat a large skillet over medium heat and add the olive oil.
- Add the ground beef, breaking it up. Cook until browned, about 6–8 minutes. Drain excess fat if necessary.
- Add diced bell peppers, chopped onion, and minced garlic. Sauté until vegetables are tender, about 5–7 minutes.
- Season with salt, black pepper, and Italian seasoning. Stir to coat evenly.
- Pour in the undrained diced tomatoes and tomato sauce, stirring to combine. Bring to a gentle simmer.
- Reduce heat and simmer uncovered for about 10 minutes.
- Stir in the cooked rice and heat through for 3–5 minutes, mixing completely.
- Sprinkle shredded mozzarella evenly over the skillet, cover, and remove from heat. Let sit 2–4 minutes until the cheese melts.
- Garnish with chopped parsley and serve hot.
Notes
For lighter options, substitute ground beef with turkey or plant-based crumbles. Use leftover rice for the best texture.
