Description

A quick and easy No-Bake Strawberry Shortcake that comes together in just 30 minutes, perfect for any occasion.


Ingredients

  • 2 lbs Fresh Strawberries
  • 1/4 cup Granulated Sugar
  • 1 tsp Vanilla Extract
  • 16 oz Pre-baked Cake (pound cake or angel food cake)
  • 2 cups Heavy Whipping Cream
  • 1/2 cup Powdered Sugar
  • 1 tbsp Fresh Lemon Juice
  • Fresh Mint (Optional)


Instructions

  1. Start by washing your strawberries with cold water. Hull and slice them evenly.
  2. Toss the sliced strawberries in a medium bowl with granulated sugar and lemon juice. Let this sit at room temperature for 20 to 30 minutes.
  3. While the strawberries are marinating, place a glass or metal bowl in the freezer for about 10 minutes to chill it.
  4. Once chilled, pour the heavy whipping cream into the bowl. Add powdered sugar and vanilla extract.
  5. Use a hand mixer or a stand mixer to whip the cream, starting on low before increasing to medium-high.
  6. Cut your pre-baked cake into 1-inch cubes or slabs that fit your serving dishes.
  7. Begin layering your dessert in mason jars or another dish. Start with a layer of cake cubes.
  8. Next, spoon some of the macerated strawberries and their syrup over the cake layer.
  9. Add a thick layer of whipped cream, and then repeat the layers of cake, strawberries, and cream.
  10. Top it off with a dollop of whipped cream and garnish with fresh strawberries or mint if desired.
  11. Cover your desserts and chill in the refrigerator for at least an hour before serving.

Notes

Enjoy with a light, fruity drink like sparkling lemonade or iced tea. Best consumed fresh but flavors can meld beautifully overnight.
