Ingredients
- ½ cup extra virgin olive oil
- ½ cup balsamic vinegar
- ¼ cup low-sodium soy sauce
- ¼ cup Worcestershire sauce
- ⅛ cup lemon juice
- ¾ cup brown sugar
- 2 teaspoons dried rosemary
- 2 tablespoons Dijon mustard
- Salt and pepper to taste
- 6 chicken breasts or approximately 3.5 lb whole chicken
Instructions
- In a large mixing bowl, combine the olive oil, balsamic vinegar, soy sauce, Worcestershire sauce, lemon juice, brown sugar, dried rosemary, Dijon mustard, and season with salt and pepper.
- Whisk thoroughly until the mixture is well blended. Reserve half a cup of the marinade for later use.
- Place the chicken in a resealable bag and pour the remaining marinade over it.
- Seal the bag and gently massage it so that the chicken is evenly coated.
- Refrigerate for at least 30 minutes, though if you want the best flavor, marinate it for up to 24 hours.
