Ingredients
- 2 ripe mangos, peeled and diced
- 1 onion or shallot, finely chopped
- 1 jalapeño pepper, finely chopped
- ½ bell pepper, chopped
- ¼ cup fresh cilantro, chopped
- 1 garlic clove, minced
- 2 tablespoons extra virgin olive oil
- Juice from 1 lime (about 2 ½ teaspoons)
- ½ teaspoon sea salt or pink salt
- ⅛ teaspoon freshly ground black pepper
Instructions
- Combine the diced mangoes, chopped onion or shallot, and chopped jalapeño pepper in a mixing bowl.
- Add the chopped bell pepper, cilantro, and minced garlic to the bowl.
- Drizzle in the olive oil and lime juice, then sprinkle with salt and black pepper.
- Gently mix all the ingredients, taking care not to mash the mango too much.
- Serve immediately or store in the refrigerator for up to five days.
Notes
Choose ripe mangos for the best flavor. For a milder salsa, reduce the amount of jalapeño.
