Ingredients

  • 2 ripe mangos, peeled and diced
  • 1 onion or shallot, finely chopped
  • 1 jalapeño pepper, finely chopped
  • ½ bell pepper, chopped
  • ¼ cup fresh cilantro, chopped
  • 1 garlic clove, minced
  • 2 tablespoons extra virgin olive oil
  • Juice from 1 lime (about 2 ½ teaspoons)
  • ½ teaspoon sea salt or pink salt
  • ⅛ teaspoon freshly ground black pepper


Instructions

  1. Combine the diced mangoes, chopped onion or shallot, and chopped jalapeño pepper in a mixing bowl.
  2. Add the chopped bell pepper, cilantro, and minced garlic to the bowl.
  3. Drizzle in the olive oil and lime juice, then sprinkle with salt and black pepper.
  4. Gently mix all the ingredients, taking care not to mash the mango too much.
  5. Serve immediately or store in the refrigerator for up to five days.

Notes
