Description

Decadent brownies infused with Biscoff cookie butter, creating a luxurious dessert experience.


Ingredients

  • 3/4 cup Biscoff cookie butter
  • 1/2 cup light or dark brown sugar (packed)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 large egg yolk
  • 1 tablespoon vanilla extract
  • 10 tablespoons unsalted butter
  • 2/3 cup + 1/4 cup semi-sweet chocolate chips
  • 1/4 cup unsweetened Dutch cocoa powder
  • 2/3 cup + 1 tablespoon all-purpose flour
  • 1 teaspoon espresso powder
  • 1/2 teaspoon fine sea salt
  • 4-5 Biscoff cookies (for topping)
  • Extra cookie butter (for drizzling)


Instructions

  1. Press a large piece of parchment paper into an 8×8 square metal baking pan, making sure to crease the edges.
  2. Spread the Biscoff cookie butter evenly inside the pan and chill in the freezer until firm.
  3. Preheat your oven to 350°F (180°C).
  4. In a large bowl, whisk together the brown sugar, granulated sugar, eggs, and vanilla extract until well combined.
  5. Melt the butter and chocolate chips together in a microwave-safe bowl until smooth, then whisk in the cocoa powder.
  6. Stir the melted chocolate mixture into the egg mixture until just combined.
  7. Gently fold in the flour, espresso powder, and salt until all ingredients are just incorporated.
  8. Pour half of the brownie batter into the prepared pan, spreading it evenly to the edges.
  9. Remove the frozen Biscoff cookie butter from the freezer and place it on top of the batter. Pour the remaining brownie batter over this layer.
  10. Break the Biscoff cookies into pieces and press them into the top of the batter. For an extra touch, warm 2 tablespoons of cookie butter in the microwave and drizzle it over the top.
  11. Bake in the preheated oven for 30-40 minutes, or until a toothpick comes out with a few moist crumbs.
  12. Allow the brownies to cool completely on a wire rack before removing them from the pan. Optionally, drizzle more cookie butter on top before slicing.

Notes

For added texture, consider mixing in chopped nuts or swirling in extra melted cookie butter.
