Description

Hearty breakfast enchiladas filled with fluffy scrambled eggs, savory sausage, and melted cheese, topped with rich sausage gravy.


Ingredients

  • 6 eggs, scrambled
  • 1 pound crumbled sausage
  • 2 cups cheese
  • 1 cup hash browns or roasted potatoes
  • 4 tortillas
  • 1/2 pound sausage for the gravy
  • 2 tablespoons flour
  • 2 cups milk
  • Seasonings to taste


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the sausage in a large skillet over medium heat until browned, then set aside.
  3. Scramble the eggs in the same skillet, then combine with cooked sausage, hash browns, and cheese.
  4. Spoon the mixture onto each tortilla, rolling tightly, and place seam side down in a greased baking dish.
  5. Cook the remaining sausage in the skillet until browned, sprinkle in flour, and stir.
  6. Whisk in the milk gradually and cook until thickened, seasoning with spices to taste.
  7. Pour the gravy over the enchiladas in the baking dish.
  8. Bake for about 20 minutes or until heated through and cheese is bubbly.
