Ingredients

  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • 1 cup bread crumbs
  • Oil for frying
  • Paprika for garnish


Instructions

  1. Start by hard boiling the eggs. Place them in a pot with cold water, bring it to a boil, then cover and remove from heat. Let them sit for about 10-12 minutes.
  2. Transfer the eggs to an ice bath to cool. This makes peeling them much easier.
  3. Once cooled, peel the eggs and slice them in half lengthwise, scooping the yolks into a bowl.
  4. Mash the yolks with mayonnaise, Dijon mustard, Cajun seasoning, salt, and pepper until the mixture is smooth.
  5. Fill the egg whites with the yolk mixture generously.
  6. Roll the filled egg halves in breadcrumbs to ensure they are well-coated.
  7. Heat oil in a frying pan over medium-high heat, then fry the eggs until they are golden brown on both sides.
  8. Remove the fried eggs and let them drain on paper towels. Finally, sprinkle with paprika before serving for an eye-catching finish.

Notes

For extra crunch, consider double-dipping the egg halves in breadcrumbs. You can also experiment with various seasonings.
