Ingredients
- ½ cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup unsweetened cocoa powder
- ½ cup all-purpose flour
- ¼ tsp baking powder
- ¼ tsp salt
- ½ cup unsalted butter, softened
- ½ cup packed brown sugar
- ¼ cup granulated sugar
- 2 tbsp milk or cream
- 1 tsp vanilla extract
- 1 ¼ cups all-purpose flour (heat-treated)
- 1 cup mini chocolate chips
- 2 cups semi-sweet chocolate chips or candy melts
- 1 tbsp coconut oil (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
- Whisk together the melted butter and granulated sugar until combined. Beat in the eggs and vanilla extract until smooth.
- Stir in the cocoa powder, flour, baking powder, and salt, then spread the brownie batter into the prepared pan. Bake for 20-25 minutes, or until a toothpick inserted comes out with moist crumbs. Let cool completely.
- Beat the softened butter, brown sugar, and granulated sugar until light and fluffy. Add in the milk and vanilla extract, mixing until well combined. Gradually add the heat-treated flour, mixing until fully combined. Fold in the mini chocolate chips.
- Roll the cookie dough into 1-inch balls and refrigerate until firm.
- Cut the cooled brownies into squares slightly larger than the cookie dough balls. Flatten each brownie square and place a cookie dough ball in the center. Carefully wrap the brownie around the dough, sealing the edges.
- Melt the semi-sweet chocolate chips or candy melts alongside the coconut oil in 30-second intervals in the microwave, stirring in between. Dip each brownie bite into the melted chocolate, letting any excess drip off. Place them on a parchment-lined tray.
- Refrigerate the brownie bites for about 15 minutes to set the chocolate coating. Serve chilled or at room temperature.
Notes
For a fun twist, substitute chocolate chips with peanut butter chips or add a sprinkle of sea salt on top.
