Ingredients

  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ¼ tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ½ cup packed brown sugar
  • ¼ cup granulated sugar
  • 2 tbsp milk or cream
  • 1 tsp vanilla extract
  • 1 ¼ cups all-purpose flour (heat-treated)
  • 1 cup mini chocolate chips
  • 2 cups semi-sweet chocolate chips or candy melts
  • 1 tbsp coconut oil (optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. Whisk together the melted butter and granulated sugar until combined. Beat in the eggs and vanilla extract until smooth.
  3. Stir in the cocoa powder, flour, baking powder, and salt, then spread the brownie batter into the prepared pan. Bake for 20-25 minutes, or until a toothpick inserted comes out with moist crumbs. Let cool completely.
  4. Beat the softened butter, brown sugar, and granulated sugar until light and fluffy. Add in the milk and vanilla extract, mixing until well combined. Gradually add the heat-treated flour, mixing until fully combined. Fold in the mini chocolate chips.
  5. Roll the cookie dough into 1-inch balls and refrigerate until firm.
  6. Cut the cooled brownies into squares slightly larger than the cookie dough balls. Flatten each brownie square and place a cookie dough ball in the center. Carefully wrap the brownie around the dough, sealing the edges.
  7. Melt the semi-sweet chocolate chips or candy melts alongside the coconut oil in 30-second intervals in the microwave, stirring in between. Dip each brownie bite into the melted chocolate, letting any excess drip off. Place them on a parchment-lined tray.
  8. Refrigerate the brownie bites for about 15 minutes to set the chocolate coating. Serve chilled or at room temperature.

Notes

For a fun twist, substitute chocolate chips with peanut butter chips or add a sprinkle of sea salt on top.
