Description

A comforting chicken noodle soup that brings warmth and joy to chilly evenings, perfect for families and gatherings.


Ingredients

  • 1 lb Chicken (breast or thighs)
  • 8 oz Egg noodles (or your favorite noodle)
  • 2 Carrots, chopped
  • 2 Celery stalks, chopped
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 6 cups Chicken broth
  • 1 tsp Thyme
  • 2 Bay leaves
  • Salt and pepper, to taste
  • 2 tbsp Olive oil
  • Fresh parsley, for garnish


Instructions

  1. Heat some olive oil in a large pot over medium heat. Sauté the onions, garlic, celery, and carrots until softened, about 5-7 minutes.
  2. Season the chicken with salt and pepper, then add it to the pot. Brown the chicken slightly on all sides.
  3. Pour in the chicken broth and add the bay leaves and thyme. Bring the mixture to a gentle simmer.
  4. After 20 minutes, remove the chicken from the pot and shred it. Return the shredded chicken back into the pot.
  5. Stir in the noodles and cook until tender, about 7-10 minutes. Adjust seasoning to taste.
  6. Serve the soup hot, garnished with fresh parsley.

Notes

Feel free to use vegetable broth for a vegetarian option or add extra greens. This soup is freezer-friendly and can be reheated easily.
