A comforting chicken noodle soup that brings warmth and joy to chilly evenings, perfect for families and gatherings.
Ingredients
- 1 lb Chicken (breast or thighs)
- 8 oz Egg noodles (or your favorite noodle)
- 2 Carrots, chopped
- 2 Celery stalks, chopped
- 1 Onion, chopped
- 3 cloves Garlic, minced
- 6 cups Chicken broth
- 1 tsp Thyme
- 2 Bay leaves
- Salt and pepper, to taste
- 2 tbsp Olive oil
- Fresh parsley, for garnish
Instructions
- Heat some olive oil in a large pot over medium heat. Sauté the onions, garlic, celery, and carrots until softened, about 5-7 minutes.
- Season the chicken with salt and pepper, then add it to the pot. Brown the chicken slightly on all sides.
- Pour in the chicken broth and add the bay leaves and thyme. Bring the mixture to a gentle simmer.
- After 20 minutes, remove the chicken from the pot and shred it. Return the shredded chicken back into the pot.
- Stir in the noodles and cook until tender, about 7-10 minutes. Adjust seasoning to taste.
- Serve the soup hot, garnished with fresh parsley.
Notes
Feel free to use vegetable broth for a vegetarian option or add extra greens. This soup is freezer-friendly and can be reheated easily.
