Ingredients
- 2 cups grated carrots
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup vegetable oil
- 1/4 cup applesauce
- 4 large eggs

- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup chopped walnuts or pecans (optional)
- 1/2 cup raisins (optional)

Instructions
- Preheat the oven to 350°F (175°C) and grease your baking pan.
- Mix the grated carrots, sugars, oil, applesauce, and eggs until well combined.
- Whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt in a separate bowl.
- Gradually add the dry mixture to the wet ingredients and stir gently until just combined, adding nuts and raisins if desired.
- Pour and spread the batter evenly in the baking pan.
