Ingredients

  • 1 pie crust (store-bought or homemade)
  • 1 cup mixed fresh vegetables (bell peppers, spinach, onions, or mushrooms)
  • 4 large eggs
  • 1 cup milk (dairy or plant-based)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • Salt and pepper, to taste
  • 1 tablespoon olive oil or butter for sautéing


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil or butter in a skillet over medium heat.
  3. Add mixed vegetables to the skillet and sauté until tender.
  4. Whisk together eggs, milk, salt, and pepper in a large bowl until smooth.
  5. Spread the sautéed vegetables evenly over the pie crust.
  6. Pour the egg mixture over the vegetables.
  7. Sprinkle shredded cheese on top.
  8. Bake for 30-35 minutes until set and golden brown.
