Fluffy and sweet banana pancakes, perfect for family breakfasts or special occasions.
Ingredients
- 3 cups all-purpose flour
- 4 teaspoons baking powder
- ½ teaspoon salt
- 4 ripe bananas, mashed
- 4 tablespoons unsalted butter, melted (plus more for cooking)
- 2 eggs
- 1½ cups buttermilk
- ½ cup brown sugar
- 2 teaspoons pure vanilla extract
Instructions
- Mash the ripe bananas until smooth, leaving a few small lumps for added texture.
- Stir in the melted butter, eggs, buttermilk, brown sugar, and vanilla extract until well combined.
- Whisk together the flour, baking powder, and salt in a separate bowl.
- Gradually add the dry ingredients to the banana mixture, stirring just until the batter comes together. Be careful not to overmix!
- Heat a non-stick skillet or griddle over low to medium-low heat and melt a small pat of butter.
- Pour about ⅓ cup of batter onto the skillet for each pancake. Cook slowly for 2-3 minutes until bubbles form on the surface and the edges seem set.
- Flip the pancakes and cook for another 2-3 minutes until they’re golden brown and cooked through.
- Repeat until all the batter is used and enjoy the wafting scent of banana pancakes filling your home!
