Description

A comforting and versatile egg casserole perfect for brunch, packed with protein and vibrant flavors.


Ingredients

  • 12 large eggs
  • 2 cups whole milk
  • 2 cups shredded sharp cheddar cheese
  • 1 cup diced ham or cooked sausage
  • 1 cup chopped spinach (fresh or thawed)
  • 1 red bell pepper (diced)
  • 1 small onion (finely chopped)
  • 1 cup biscuit mix (like Bisquick or flour)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon nutmeg (optional)
  • Butter or oil for greasing


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a large baking dish with butter or oil.
  2. In a skillet, sauté the chopped onion and diced red bell pepper until they are tender and slightly caramelized.
  3. In a large bowl, beat the eggs and mix in the milk, salt, pepper, garlic powder, and nutmeg.
  4. Gradually add the biscuit mix to the egg mixture, stirring until fully combined.
  5. Fold in the sautéed vegetables, spinach, cheese, and your choice of ham or sausage.
  6. Pour the mixture into your prepared baking dish and bake for about 45 minutes, or until the top is golden brown and set.

Notes

Store leftovers in the refrigerator for up to 3-4 days. You can also freeze them for up to three months.
