  • 8 (8-inch) flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 tbsp butter
  • Non-stick cooking spray


Instructions

  1. Crack the eggs into a large bowl. Add milk, salt, and pepper. Whisk until well-blended and frothy.
  2. In a non-stick skillet over medium heat, melt the butter. Pour the egg mixture into the skillet, gently stirring until the eggs are soft and fluffy—this should take about 5-7 minutes. Remove from heat.
  3. Lightly toast the tortillas in a dry skillet or microwave them for a few seconds to enhance pliability.
  4. On a flat surface, lay a warm tortilla. Place a sausage link at the edge, add a tablespoon of scrambled eggs, and sprinkle cheese generously on top.
  5. Tightly roll the tortilla, folding in the ends to seal in that delicious filling.
  6. Clean the skillet and spray it lightly with non-stick cooking spray or add more butter. Heat over medium heat. Place the roll-ups seam side down and cook until golden brown, about 2-3 minutes per side.
