- 8 pre-cooked breakfast sausage links
- 8 (8-inch) flour tortillas
- 1 cup shredded cheddar cheese
- 1 tbsp butter
- Non-stick cooking spray
Instructions
- Crack the eggs into a large bowl. Add milk, salt, and pepper. Whisk until well-blended and frothy.
- In a non-stick skillet over medium heat, melt the butter. Pour the egg mixture into the skillet, gently stirring until the eggs are soft and fluffy—this should take about 5-7 minutes. Remove from heat.
- Lightly toast the tortillas in a dry skillet or microwave them for a few seconds to enhance pliability.
- On a flat surface, lay a warm tortilla. Place a sausage link at the edge, add a tablespoon of scrambled eggs, and sprinkle cheese generously on top.
- Tightly roll the tortilla, folding in the ends to seal in that delicious filling.
- Clean the skillet and spray it lightly with non-stick cooking spray or add more butter. Heat over medium heat. Place the roll-ups seam side down and cook until golden brown, about 2-3 minutes per side.
