Description
A delicious summer dish that combines juicy grilled chicken with ripe avocados and fresh tomatoes, perfect for barbecues or weeknight dinners.
Ingredients
- 4 chicken breasts
- 2 ripe avocados
- 1 cup cherry tomatoes, halved
- 1/4 cup olive oil
- Juice of 2 limes
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a bowl, mix the olive oil, lime juice, minced garlic, cumin, chili powder, salt, and pepper to create a zesty marinade.
- Place the chicken breasts into the marinade, ensuring they are well-coated. Allow them to marinate for at least 30 minutes for maximum flavor.
- Preheat your grill to medium-high heat.
- Grill the chicken for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center.
- While the chicken grills, slice the ripe avocados and chop the cherry tomatoes.
- Once the chicken is cooked, remove it from the grill and let it rest for a few minutes.
- Serve the grilled chicken topped generously with avocado slices and fresh tomatoes.
- Garnish with fresh cilantro before serving.
Notes
Marinating the chicken longer can enhance the flavor. Avoid freezing the avocado.
