  • 3 large eggs, separated

  • 1 cup water
  • 1/4 teaspoon cream of tartar
  • Butter (for greasing the tart shell, optional)


Instructions

  1. Preheat your oven to 350°F (175°C). Place your tart shell inside and bake it until golden brown.
  2. Combine the sugar, cornstarch, and water in a medium saucepan. Cook over medium heat, stirring constantly until it thickens.
  3. Whisk the lemon juice and egg yolks in a separate bowl. Once thickened, incorporate this mixture into the saucepan, cooking for an additional 2-3 minutes.
  4. Remove the saucepan from heat and mix in the lemon zest. Pour this delightful filling into your prepared tart shell.
