Description

A chilled, creamy dessert featuring vibrant berry swirls, perfect for summer gatherings and Independence Day celebrations.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries (such as strawberries, blueberries, and raspberries)
  • 1/4 cup sugar (for the berry swirl)


Instructions

  1. Prepare the crust: In a medium bowl, combine the graham cracker crumbs with melted butter. Press this mixture evenly into the bottom of a pie dish. Refrigerate for about 30 minutes to allow it to set firmly.
  2. Beat the cream cheese with the powdered sugar until it’s smooth and creamy.
  3. Whip the heavy cream with the vanilla extract until stiff peaks form.
  4. Fold the whipped cream into the cream cheese mixture until well combined.
  5. Blend the mixed berries with the 1/4 cup of sugar until it’s pureed to your liking.
  6. Pour half of the cheesecake filling into the prepared crust. Drizzle some of the berry puree over it, using a knife to create swirls. Repeat this process with the remaining filling and berry puree.
  7. Cover the pie and refrigerate for at least 240 minutes or until set. Serve chilled for the best experience.

Notes

This pie is best served cold, and can be garnished with extra berry puree or whipped cream. Store leftovers in the refrigerator for up to three days.
