Indulgent brownies stuffed with rich, creamy peanut butter, blending intense chocolate flavor with a delightful gooey center.
Ingredients
- 3/4 cup smooth peanut butter (not natural)
- 1 cup powdered sugar (110 grams)
- 1 teaspoon vanilla extract (for peanut butter filling)
- 1/2 cup all-purpose flour (63 grams)
- 1/4 cup cocoa powder (22 grams)
- 1/4 teaspoon salt
- 1/2 cup unsalted butter (112 grams)
- 6 ounces semi-sweet chocolate (180 grams) or 50-60% dark chocolate
- 1 cup granulated sugar (200 grams)
- 2 large eggs
- 1 large egg yolk (discard the white)
- 1 teaspoon vanilla extract (for brownie batter)
Instructions
- Preheat your oven to 350°F (180°C) and prepare an 8×8 inch (20×20 cm) pan with parchment paper.
- Combine peanut butter, powdered sugar, and 1 teaspoon of vanilla extract in a mixing bowl.
- Melt the unsalted butter and semi-sweet chocolate together over simmering water until smooth.
- Whisk granulated sugar into the melted chocolate mixture, then beat in the eggs and egg yolk along with another teaspoon of vanilla extract.
- Sift together flour, cocoa powder, and salt in another bowl. Gradually fold this into the chocolate mixture until just combined.
- Spread half of the brownie batter into the prepared pan. Scoop peanut butter filling over it, spreading to the edges.
- Pour the remaining brownie batter over the top, smoothing it gently.
- Bake for 25-30 minutes, or until the edges look set and a toothpick inserted in the center comes out with a few moist crumbs.
- Cool completely in the pan before lifting out and cutting into squares.
Notes
For an extra indulgent treat, serve warm with vanilla ice cream or drizzle chocolate/caramel sauce on top.
