Description

Juicy pieces of marinated pork tenderloin, sweet pineapple chunks, and colorful vegetables make these skewers a perfect dish for summer barbecues or quick weeknight treats.

Ingredients

  • 1 pound pork tenderloin, cut into 1-inch cubes
  • 1 fresh pineapple, cut into 1-inch chunks
  • 1 red onion, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1/2 cup BBQ sauce
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your grill to medium heat.
  2. Combine the pork cubes, pineapple chunks, red onion, and green bell pepper in a large mixing bowl.
  3. Whisk together the BBQ sauce, olive oil, soy sauce, garlic powder, and black pepper in a separate small bowl.
  4. Pour this mixture over the pork and vegetables, tossing well to coat everything evenly.
  5. Thread the marinated pork and vegetables onto skewers, alternating the pieces for a colorful presentation.
  6. Grill the skewers for 15-20 minutes, turning occasionally until the pork is cooked through and the veggies are tender.
  7. Brush with additional BBQ sauce during the last few minutes if desired.
  8. Serve hot and enjoy!

Notes

For additional flavor, consider marinating the pork and vegetables for a few hours before grilling and experiment with different vegetables.
