Ingredients
- 1 cup rolled oats
- 1 cup milk (or non-dairy alternative)
- 1/2 cup pumpkin puree
- 1/2 cup Greek yogurt (or non-dairy alternative)
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin spice
- A pinch of salt
Instructions
- In a bowl or jar, combine the rolled oats with your chosen milk.
- Add the pumpkin puree and Greek yogurt.
- Sweeten with maple syrup, then stir in the vanilla extract, pumpkin spice, and a pinch of salt.
- Mix everything thoroughly until well incorporated.
- Cover the bowl or jar and refrigerate overnight or for a minimum of four hours.
