Deliciously warm and savory muffins filled with hash browns, cheddar cheese, and bacon, perfect for breakfast or snacking.
Ingredients
- 2 cups grated hash browns
- 6 eggs
- 1 cup shredded cheddar cheese
- 1 cup cooked and crumbled bacon
- 1/2 cup milk
- Salt and pepper to taste
- Cooking spray or oil for greasing
Instructions
- Preheat your oven to 375°F (190°C) and grease a muffin tin with cooking spray or oil.
- Combine the grated hash browns, eggs, milk, salt, and pepper in a large mixing bowl. Mix thoroughly until well blended.
- Stir in the shredded cheddar cheese and cooked bacon until evenly distributed.
- Spoon the mixture into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 25-30 minutes, or until the tops are golden brown and the muffins have set.
- Allow them to cool for a few minutes before gently removing them from the tin. Enjoy them warm!
Notes
For a vegetarian version, substitute the bacon with diced vegetables.
