Description

An easy dessert that combines creamy cheesecake with the delightful sweetness of strawberries, perfect for any occasion.


Ingredients

  • 2 cups fresh strawberries (sliced; frozen can work too)
  • 1 (8 oz) package cream cheese (softened; low-fat works)
  • 1 cup granulated sugar (or coconut sugar for a lighter option)
  • 1 teaspoon vanilla extract
  • 1 box yellow cake mix (or gluten-free cake mix)
  • 1/2 cup unsalted butter (melted; coconut oil for dairy-free)
  • 1 cup milk (almond or oat milk for dairy-free)
  • 1/2 teaspoon salt
  • Powdered sugar (for dusting, optional)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Toss the sliced strawberries with 1/4 cup of granulated sugar in a medium bowl. Let them sit for about 10 minutes to release their juices.
  3. Beat the softened cream cheese with the remaining 3/4 cup of sugar and the vanilla extract until smooth and creamy in another bowl.
  4. Combine the yellow cake mix, melted butter, milk, and salt in a large mixing bowl. Stir until just combined.
  5. Grease a 9×13-inch baking dish. Pour half of the cake batter into the bottom. Spread the cream cheese layer on top, followed by the marinated strawberries. Finish by pouring the remaining cake batter over everything.
  6. Bake for 45-50 minutes, until the top is golden and a toothpick emerges clean.
  7. Allow the cake to cool for about 10-15 minutes before dusting with powdered sugar. Enjoy!

Notes

For a denser texture, reduce the milk slightly in the batter. Serve with vanilla ice cream for an enhanced experience.
