Ingredients

- 1 tablespoon baking powder

- 1/2 cup unsalted butter, cold and cubed
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- 1 cup diced fresh strawberries
- Zest of 1 lemon
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 400°F (200°C).
- Mix together the flour, sugar, baking powder, and salt in a large bowl.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Whisk together the heavy cream, vanilla extract, lemon zest, and lemon juice in another bowl.
- Gradually stir the wet ingredients into the dry ingredients, mixing until just combined.
- Fold in the diced strawberries gently, being careful not to overmix.
- Turn the dough out onto a floured surface and knead gently until it comes together.
- Pat the dough into a circle about 1-inch thick, then cut out your scones with a biscuit cutter.
- Place the scones on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes, or until golden brown.
- Cool slightly before serving.
