  • 1 tablespoon baking powder

  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup diced fresh strawberries
  • Zest of 1 lemon
  • 1 tablespoon lemon juice


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix together the flour, sugar, baking powder, and salt in a large bowl.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Whisk together the heavy cream, vanilla extract, lemon zest, and lemon juice in another bowl.
  5. Gradually stir the wet ingredients into the dry ingredients, mixing until just combined.
  6. Fold in the diced strawberries gently, being careful not to overmix.
  7. Turn the dough out onto a floured surface and knead gently until it comes together.
  8. Pat the dough into a circle about 1-inch thick, then cut out your scones with a biscuit cutter.
