A light and airy strawberry mousse perfect for summer gatherings or simple weeknight treats.
Ingredients
- 2 cups fresh strawberries, hulled
- 1/2 cup sugar
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- 2 tablespoons gelatin
- 1/4 cup water
Instructions
- Puree the strawberries: Blend the hulled strawberries with sugar until you achieve a smooth consistency.
- Prepare the gelatin: In a small bowl, sprinkle the gelatin over the water and let it sit for about 5 minutes to soften.
- Dissolve the gelatin: Gently heat the gelatin mixture until it’s completely dissolved, then mix it into the strawberry puree until well combined.
- Whip the cream: In a separate bowl, beat the heavy cream along with vanilla extract until soft peaks form.
- Combine the mixtures: Gently fold the whipped cream into the strawberry mixture until everything is evenly blended.
- Chill: Spoon the mousse into serving dishes and refrigerate for at least 120 minutes before serving.
Notes
Store leftovers covered in the refrigerator for up to 3 days. Avoid freezing the mousse.
