Delightful Strawberry Shortcake Bars featuring a buttery crust, sweet strawberry filling, and creamy glaze, perfect for any season.
Ingredients
- 1 ¾ cups all-purpose flour
- ⅓ cup granulated sugar
- 3 tablespoons packed light brown sugar
- ¾ cup salted butter, melted
- 1 teaspoon pure vanilla extract
- 1 tablespoon all-purpose flour (for the filling)
- 3 cups chopped fresh strawberries
- 2 tablespoons granulated sugar (for the strawberries)
- ½ cup powdered sugar
- 1 tablespoon light or heavy whipping cream
- ¼ teaspoon pure vanilla extract (for the glaze)
Instructions
- Preheat your oven to 350°F (175°C). Prepare an 8-inch square baking pan by greasing it or lining it with parchment paper.
- Combine the 1 ¾ cups of flour, ⅓ cup granulated sugar, 3 tablespoons of brown sugar, and melted butter in a bowl. Stir until the mixture is well blended and crumbly.
- Press the mixture evenly into the bottom of the prepared pan to form your crust.
- Combine the chopped strawberries with 2 tablespoons of granulated sugar and 1 tablespoon of flour in another bowl. Toss until the strawberries are evenly coated.
- Spread the strawberry mixture over the crust, making sure to distribute it evenly.
- Bake for 30-35 minutes, or until the filling is bubbling and the crust is lightly golden. Allow to cool completely.
- Whisk together powdered sugar, whipping cream, and ¼ teaspoon of vanilla extract until smooth for the glaze.
- Drizzle the glaze over the cooled bars. Let it set, and then cut into squares.

Store in an airtight container in the refrigerator for up to a week, or freeze for up to three months.
