Description

Delightful Strawberry Shortcake Bars featuring a buttery crust, sweet strawberry filling, and creamy glaze, perfect for any season.


Ingredients

  • 1 ¾ cups all-purpose flour
  • ⅓ cup granulated sugar
  • 3 tablespoons packed light brown sugar
  • ¾ cup salted butter, melted
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon all-purpose flour (for the filling)
  • 3 cups chopped fresh strawberries
  • 2 tablespoons granulated sugar (for the strawberries)
  • ½ cup powdered sugar
  • 1 tablespoon light or heavy whipping cream
  • ¼ teaspoon pure vanilla extract (for the glaze)


Instructions

  1. Preheat your oven to 350°F (175°C). Prepare an 8-inch square baking pan by greasing it or lining it with parchment paper.
  2. Combine the 1 ¾ cups of flour, ⅓ cup granulated sugar, 3 tablespoons of brown sugar, and melted butter in a bowl. Stir until the mixture is well blended and crumbly.
  3. Press the mixture evenly into the bottom of the prepared pan to form your crust.
  4. Combine the chopped strawberries with 2 tablespoons of granulated sugar and 1 tablespoon of flour in another bowl. Toss until the strawberries are evenly coated.
  5. Spread the strawberry mixture over the crust, making sure to distribute it evenly.
  6. Bake for 30-35 minutes, or until the filling is bubbling and the crust is lightly golden. Allow to cool completely.
  7. Whisk together powdered sugar, whipping cream, and ¼ teaspoon of vanilla extract until smooth for the glaze.
  8. Drizzle the glaze over the cooled bars. Let it set, and then cut into squares.

Store in an airtight container in the refrigerator for up to a week, or freeze for up to three months.
